Shrimp salad

How about a different spring dish today? It feels good to eat a light meal for lunch, avoiding the pasta once in a while. This is how I make it, but of course you can replace any ingredient for your taste. You’ll need;

  • 400 gram fresh shrimp
  • 1 small cucumber
  • 1 carrot
  • 4 reddish
  • celery
  • 1/2 orange or lemon
  • parsley
  • olive oil
  • salt and pepper

You clean the shrimp, put them in boiling water for 3 minutes and give them a cold shower so they cool off the heat. Then you cut the vegetables and season your salad with olive oil, fine cut parsley, orange or lemon juice, salt and pepper. Enjoy!
